Description
These Chocolate Banana Nut Energy Bites are the perfect snack for after school, post-workout or as an afternoon pick-me-up. Only 80 calories per bite! Vegan and gluten-free.
Ingredients
- 1 cup pitted dried dates
- 1 medium banana
- 1 cup walnut or pecan halves, plus 1/3 cup finely chopped nuts for outer coating
- 2 Tablespoons unsweetened cocoa
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- pinch of salt
Instructions
- Place all the ingredients in a food processor or high power blender. Blend until everything is chopped and it starts to form a ball. If it doesn’t form a ball, add some water – about 1 teaspoon at a time- until it does.
- Place the extra 1/3 cup finely chopped nuts in a small bowl.
- Take the mixture out 1 heaping Tablespoon at a time, roll it into a ball with your hands. Roll the ball in the chopped nuts and set on a parchment paper lined baking sheet or in a container for storing. Continue until the mixture is all used. The texture is pretty soft, so I recommend putting in the fridge to help them set-up a bit.
- Keep stored in the fridge for up to 2 weeks.
Notes
If your dates are dry, you may need to soak them in water for 5 to 10 minutes prior to using them for this recipe. If they are fresher and more plump you do not need to soak them.
