Description
Topped with oats, nuts and brown sugar, these Cinnamon Chip Streusel Muffins are a great treat for brunch or dessert!
Ingredients
For the muffins:
- 1 cup whole wheat pastry flour
- 1/3 cup sugar (or sweetener of choice)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 egg
- 2 Tablespoons oil
- 1/4 cup cinnamon chips
For the streusel:
- 2 Tablespoons brown sugar
- 1/4 cup oats
- 1/4 cup chopped nuts
- 1/2 teaspoon ground cinnamon
- 1 Tablespoon oil
Instructions
For the muffins:
- Preheat oven to 425 degrees F. Spray muffin tin with nonstick cooking spray (I like Baker’s Joy)
- In a medium bowl, sift together the flour, sugar, baking soda, baking powder and salt. Make a well in the center of the mixture.
- In a separate small bowl, whisk the milk, egg and oil together. Pour the liquid into the well you made in the dry mixture. Slowly incorporate the wet ingredients into the dry, about 12-16 strokes (do not over-mix). Add the cinnamon chips and stir to combine.
- Pour equally into 6 muffin cups, each about 3/4 full.
For the streusel:
- In a small bowl, combine the brown sugar, oats, nuts and cinnamon. Add the oil and stir until the oil is evenly coated over the oat mixture.
- Sprinkle the streusel over top each of the muffins. Slightly pat down, so it will stay on when the muffins rise.
- Bake muffins for 15-20 minutes, or until golden brown on top and a toothpick inserted in the center comes out clean.
