Description
Start your day off by getting some greens in with these Green Pancakes! Whole wheat and naturally colored with spinach, they are a heart healthy option even the kids will love!
Ingredients
- 3 cups packed spinach
- 2 large eggs
- 3/4 cup milk of choice
- 1 1/4 cup white whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 Tablespoons honey or pure maple syrup
- 1 teaspoon vanilla extract
Instructions
- Preheat griddle or skillet to medium heat.
- Place all ingredients in a blender. Blend on high for 30-60 seconds or until a smooth batter is formed.
- Pour about 1/4 cup of the pancake batter onto the griddle at a time. Cook until the edges are set and they are golden on the bottom, about 3 minutes. Flip pancakes and cook on the other side until golden, another 2 minutes. Continue until you have used all the batter.
- Enjoy your green pancakes with your favorite toppings, such as pure maple syrup, peanut butter or fresh fruit!
Notes
These pancakes have a little bit of a spinach taste. If you would prefer to “hide” the spinach better, either decrease the spinach to 2 cups or try adding another tablespoon of honey.
