Healthy Chocolate Peanut Butter Truffles

Description

Smooth, rich and delicious healthy chocolate peanut butter truffles are perfect for the holidays or as a special treat any time of the year!


Ingredients

Scale
  • 1 cup natural peanut butter
  • 1/2 cup peanut butter powder
  • 1/2 cup ground flaxseed
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 2 Tablespoons honey or maple syrup
  • pinch of salt
  • 3/4 cup semi-sweet or dark chocolate chips (you may need more or less depending on how much chocolate stays on your truffles when dipping them).

Instructions

  1. Place all ingredients except the chocolate in a medium bowl; stir until well combined.
  2. Taking about 1 teaspoon at a time, roll mixture into balls.
  3. Heat the chocolate in a medium size double boiler. Alternatively, you can melt the chocolate in your microwave, 30 seconds at a time until just melted, then stir until fully melted.
  4. Roll/dip the peanut butter balls in the melted chocolate until full covered. Transfer to a baking sheet covered with aluminum foil, parchment paper or a silicone baking mat to allow to set. For quicker set up, place the baking sheet in the refrigerator.
  5. You can store in an airtight container at room temperature or in the refrigerator for 5 to 7 days.

Notes

  • I prefer using a double boiler, like this one (affiliate link), so the chocolate will stay melted and smooth (and not burnt) while I dip all of the peanut butter balls in the chocolate.
  • I like to use these tools (affiliate link) – specifically the spiral one – to help with rolling and dipping the peanut butter balls in the chocolate.
