Description

Enjoy the flavors of fall with this easy grab and go breakfast option of Pumpkin Pie Overnight Oats!


Ingredients

  • 1/3 cup pumpkin puree
  • 1 cup milk
  • 1/4 teaspoon pumpkin pie spice
  • 23 Tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 cup rolled oats
  • whipped cream, if desired

Instructions

  1. In a small bowl, whisk together the pumpkin puree, milk, pumpkin pie spice, maple syrup and vanilla. Stir in the oats.
  2. Pour the mixture into two small (12 oz) mason jars, distributing evenly. Seal with lids and place in the refrigerator overnight.
  3. In the morning, take out and enjoy cold, or you can heat it in the microwave (lid removed) for 1 – 1 1/2 minutes (depending on your microwave). If desired, serve with a dollop of whipped cream.
