Description
These easy Sheet Pan Chicken Fajitas are an easy weeknight dinner. Dress them up with your choice of toppings for a flavorful and filling meal!
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into 1-inch strips
- 1 large yellow onion, cut into strips
- 1 medium green bell pepper, sliced into strips
- 1 medium red bell pepper, sliced into strips
- 1 medium yellow or orange bell pepper, sliced into strips
- 2–3 Tablespoons olive oil
- 1 packet (1 oz) fajita seasoning mix
- tortillas
Topping Ideas:
- sour cream or plain Greek yogurt
- diced tomatoes
- diced avocado
- salsa
- shredded cheese
- chopped cilantro
- fresh lime juice
Instructions
- Preheat oven to 400°F. Place the chicken strips, sliced onion and bell peppers on a sheet pan. Drizzle with olive oil; toss chicken and veggies to coat with oil. Sprinkle fajita seasoning mix over chicken and veggies and toss again until fajita seasoning is distributed evenly on the mixture.
- Put in the oven and bake for 20-25 minutes, or until chicken has reached an internal temperature of 165°F.
- Remove from the oven and allow to cool slightly. Distribute among the tortillas with additional toppings as desired. Enjoy!
