Description
These Baked Apple Oatmeal Bars are a delicious way to start your day. You can also enjoy them as an after school snack or evening treat!
Ingredients
- 1/4 cup coconut oil (or unsalted butter, melted)
- 1/4 cup packed brown sugar
- 1 egg
- 1 cup milk
- 1 ripe banana, smashed
- 3 cups rolled oats
- 1 cup whole-wheat flour (can use whole wheat pastry flour or white whole wheat flour)
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 small apples, peeled and chopped
Instructions
- Preheat oven to 350° F. Spray a 8X8 inch baking dish with non-stick cooking spray.
- Whisk together the oil (or butter), brown sugar, egg, milk and smashed banana; set aside.
- In a large bowl, combine the oats, salt, baking soda, cinnamon and nutmeg. Add the wet ingredients into the flour mixture. Stir to combine. Fold in the chopped apples.
- Pour into prepared baking dish. Bake for 30 minutes.
- Cut into 9 bars. Enjoy with a glass of milk!
Notes
You could also eat this as baked oatmeal, simply serve in a bowl and add a splash of milk.
