Apple Oatmeal Bars

Description

These Baked Apple Oatmeal Bars are a delicious way to start your day. You can also enjoy them as an after school snack or evening treat!


Ingredients

  • 1/4 cup coconut oil (or unsalted butter, melted)
  • 1/4 cup packed brown sugar
  • 1 egg
  • 1 cup milk
  • 1 ripe banana, smashed
  • 3 cups rolled oats
  • 1 cup whole-wheat flour (can use whole wheat pastry flour or white whole wheat flour)
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 small apples, peeled and chopped

Instructions

  1. Preheat oven to 350° F. Spray a 8X8 inch baking dish with non-stick cooking spray.
  2. Whisk together the oil (or butter), brown sugar, egg, milk and smashed banana; set aside.
  3. In a large bowl, combine the oats, salt, baking soda, cinnamon and nutmeg. Add the wet ingredients into the flour mixture. Stir to combine. Fold in the chopped apples.
  4. Pour into prepared baking dish. Bake for 30 minutes.
  5. Cut into 9 bars. Enjoy with a glass of milk!

Notes

You could also eat this as baked oatmeal, simply serve in a bowl and add a splash of milk.
