Description
Put your stale bread to good use with this skillet Blackberry Bread Pudding recipe. A delicious one-pan dessert that is sure to impress!
Ingredients
- 6 oz. blackberries, rinsed
- 2 Tablespoons honey
- 1 teaspoon lemon juice
- 1/2 teaspoon ground cinnamon
- 3 1/2 cups cubed day old bread
- 1 cup coconut milk
- 1–2 Tablespoons brown sugar (depending on how tart the blackberries are)
- 1 teaspoon vanilla extract
- optional topping: unsweetened shredded coconut
Instructions
- Preheat oven to 350 degrees F.
- In a skillet over medium heat, add the blackberries, honey, lemon juice and cinnamon. Stir to combine, gently mashing the blackberries as you stir. Continue cooking, stirring continuously, for approximately 7-10 minutes or until the mixture is slightly syrupy.
- Add in the bread, coconut milk, brown sugar and vanilla extract. Stir to combine.
- Place in the oven and bake for 20 minutes.
- Remove from oven and sprinkle shredded coconut on top as a garnish. Serve warm. Enjoy!
