Description

Put your stale bread to good use with this skillet Blackberry Bread Pudding recipe.  A delicious one-pan dessert that is sure to impress!


Ingredients

Units Scale
  • 6 oz. blackberries, rinsed
  • 2 Tablespoons honey
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 3 1/2 cups cubed day old bread
  • 1 cup coconut milk
  • 12 Tablespoons brown sugar (depending on how tart the blackberries are)
  • 1 teaspoon vanilla extract
  • optional topping: unsweetened shredded coconut

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a skillet over medium heat, add the blackberries, honey, lemon juice and cinnamon. Stir to combine, gently mashing the blackberries as you stir. Continue cooking, stirring continuously, for approximately 7-10 minutes or until the mixture is slightly syrupy.
  3. Add in the bread, coconut milk, brown sugar and vanilla extract. Stir to combine.
  4. Place in the oven and bake for 20 minutes.
  5. Remove from oven and sprinkle shredded coconut on top as a garnish. Serve warm. Enjoy!
