Description
These healthy Chicken Salad Sandwich Sliders are made with Greek yogurt and are the perfect appetizer for any party or gathering!
Ingredients
- 2 cups shredded cooked chicken (I used rotisserie chicken)
- 1 cup chopped celery (about 3 stalks)
- 1 cup halved red seedless grapes
- 1/4 cup sliced almonds
- 1/2 cup plain Greek yogurt
- 1 teaspoon lemon juice
- 1/4 teaspoon ground black pepper
- 14 slices 100% whole wheat bread
Instructions
- In a medium bowl, combine the shredded chicken, chopped celery, halved grapes and sliced almonds.
- In a separate small bowl, whisk together the Greek yogurt, lemon juice and black pepper. Pour over the chicken mixture and stir until evenly coated.
- Remove just the crusts of each slice of bread. Lay out half of the slices of bread and place about 1/2 cup chicken salad on each slice. Top each with another slice of bread.
- Place a toothpick in the center of each quarter of the sandwiches, then carefully cut each sandwich into quarters. Place on a serving tray; cover and refrigerate until ready to serve.
- **You can make the chicken salad ahead of time and place in the fridge for up to 2 days, then place on the bread and create the sliders before serving.**
Notes
If you don’t want to make sliders, you can simply skip the step of slicing the sandwiches into quarters and keep them whole. Makes 7 whole sandwiches.
