Description

These healthy Chicken Salad Sandwich Sliders are made with Greek yogurt and are the perfect appetizer for any party or gathering!


Ingredients

Units Scale
  • 2 cups shredded cooked chicken (I used rotisserie chicken)
  • 1 cup chopped celery (about 3 stalks)
  • 1 cup halved red seedless grapes
  • 1/4 cup sliced almonds
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon lemon juice
  • 1/4 teaspoon ground black pepper
  • 14 slices 100% whole wheat bread

Instructions

  1. In a medium bowl, combine the shredded chicken, chopped celery, halved grapes and sliced almonds.
  2. In a separate small bowl, whisk together the Greek yogurt, lemon juice and black pepper. Pour over the chicken mixture and stir until evenly coated.
  3. Remove just the crusts of each slice of bread. Lay out half of the slices of bread and place about 1/2 cup chicken salad on each slice. Top each with another slice of bread.
  4. Place a toothpick in the center of each quarter of the sandwiches, then carefully cut each sandwich into quarters. Place on a serving tray; cover and refrigerate until ready to serve.
  5. **You can make the chicken salad ahead of time and place in the fridge for up to 2 days, then place on the bread and create the sliders before serving.**

Notes

If you don't want to make sliders, you can simply skip the step of slicing the sandwiches into quarters and keep them whole. Makes 7 whole sandwiches.
