Description

Enjoy a bowl of Grandma’s Cheesy Potato Soup, a comfort food classic that warms the soul and satisfies your tummy.


Ingredients

  • 1 1/2 lbs potatoes, peeled and diced 1 large onion, diced 1 quart (4 cups) water 1/4 cup unsalted butter 3 Tablespoons flour 1/2 cup milk 1 1/2 cups shredded cheese 1/2 tsp season salt 1/4 tsp paprika
  • 1/4 tsp salt 1/8 tsp ground pepper chopped chives, for garnish

Instructions

  1. Combine potatoes, onion, and water in heavy sauce pan. Bring to boil. Reduce heat and simmer until tender, about 20 minutes.
  2. Meanwhile, in a heavy skillet melt the butter. Once melted, whisk in the flour. Cook and stir until the mixture bubbles. Reduce heat and stir in milk. Continue cooking and stirring until thickened.
  3. Add the butter/flour mixture slowly into the potatoes. Cook and stir until slightly thickened. Add in the cheese and seasonings.
  4. Serve topped with chopped chives. Season with additional salt and pepper, as desired.
