Ingredients

Units Scale
  • 8 whole wheat rolls
  • 2 cups shredded cheddar cheese featuring the Real California Milk seal, divided
  • 1 1/2 cups cooked, diced ham
  • 1/3 cup diced green onion
  • 1 medium red pepper, diced
  • 1 cup packed baby spinach
  • 6 eggs
  • 3 1/2 cups milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Slice your rolls in half and lay the bottom halves in a greased 9X13-inch baking dish. Sprinkle 1 cup of the shredded cheddar cheese over top of the rolls. Next, layer the ham, green onion, red pepper, and spinach over top, one at a time. Lay the top halves of the rolls on top.
  2. In a medium size bowl, whisk together the eggs, milk, salt and pepper. Pour over the rolls in the baking dish. Cover with plastic wrap and place in the refrigerator 6-8 hours or overnight.
  3. In the morning, take the dish out the fridge and remove the plastic wrap. Bake, uncovered, at 350 degrees F for 40 minutes. Pull out of the oven and sprinkle the remaining 1 cup shredded cheese on top of the rolls. Return to the oven and continue baking an additional 15 minutes.
