Description

Sweet and savory, these tender Honey Garlic Roasted Carrots are a delicious and healthy side dish for any meal.


Ingredients

  • 2 lbs carrots
  • 2 Tablespoons olive oil (or avocado oil)
  • 3 Tablespoons honey
  • 4 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 425°F. Line a sheet pan with a silicone baking mat or aluminum foil; set aside.
  2. Wash, peel (if desired) and cut carrots into 1 1/2-inch sticks. Spread out onto the prepared sheet pan.
  3. In a small bowl, whisk together the olive oil, honey, minced garlic, salt and pepper. Drizzle over the carrots and gently toss to evenly coat.
  4. Place in the oven and bake for 20-25 minutes, or until the carrots are tender, turning once during baking.
