Description

These Pumpkin Chocolate Chip Energy Bites are the perfect fall snack to get you through that afternoon slump or to refuel you post exercise!


Ingredients

Units Scale
  • 1 1/2 cups rolled oats
  • 1/2 cup ground flax seed
  • 1/2 cup pepitas (shelled pumpkin seeds)
  • 1/2 cup mini dark chocolate chips
  • 1/2 cup 100% pumpkin puree
  • 1/4 cup natural peanut butter
  • 1/4 cup honey (or pure maple syrup)
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Place all ingredients in a bowl and stir until well combined.
  2. Taking a heaping tablespoon at a time (I used a cookie scoop), form into balls.
  3. Place on cookie sheet or in storage container.
  4. For a firmer energy bite, place in the fridge for 1-2 hours before eating.
  5. To store, keep in a sealed container in the fridge for up to 1 week.
