Description

This Tomato, Corn & Avocado Salad is a quick, easy and full of flavor side dish perfect for serving to friends and family!


Ingredients

Units Scale
  • 1 14.5 oz. can Hunt's no salt added diced tomatoes, drained
  • 1 10 oz. can RO*TEL diced tomatoes with lime juice and cilantro
  • 1 15 oz can corn, drained and rinsed
  • 1 large avocado, diced
  • 1/2 medium purple onion, diced
  • 1/4 cup packed chopped cilantro
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon lime zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Combine all ingredients together in a medium-large bowl. Stir well until everything is distributed evenly.
  2. Serve as a side dish, or you can serve as an appetizer with chips.
  3. Store in an air tight in the fridge for up to 3-5 days.
