To give you a little taste of the snack recipes and ideas Sarah includes in her book, I’m sharing one of the recipes out of the “Snacks For Your Sweet Tooth” chapter: Banana and Chocolate “Quesadilla”.
I actually modified it just a bit to match my taste preferences. Instead of a 6-inch white flour tortilla, I used an 9-inch whole wheat flour tortilla. And surprisingly, when I compared the nutrition facts on the 6-inch flour tortillas to the bigger whole wheat flour tortillas there was only a 20 calorie difference – still keeping this snack under 250 calories!

Description
This Banana and Chocolate “Quesadilla” is an easy and delicious snack option to satisfy your sweet tooth.
Ingredients
- 1 6-inch flour tortilla
- 1 small banana (6 inches), peeled and sliced
- 1 Tablespoon chocolate chips
Instructions
- Place the banana slices on top the tortilla. Cover with chocolate chips. Fold the tortilla over so you have half a “quesadilla”.
- You can cook on the stove top or cook in the microwave to melt the chocolate chips.
