When I am meal planning, there is always at least 1 meal with chicken in it, if not multiple meals. Chicken is a healthy protein option that is so versatile – that, and my kids love it. Because of this, I know the ropes when it comes to choosing chicken at the grocery store. There are many different options to choose from and it can be confusing!
That’s why I was excited when I saw Albertsons now carried air-chilled chicken. But what exactly is air-chilled chicken, you ask? Well, air-chilled chickens are individually processed in cold chambers with purified air. The result is intensely flavored chicken and 100% mouth-watering chicken flavor! No bland chicken flavor here. I’m not joking, either – just ask my picky husband (or as he says, he just has a refined palate)!
The chickens are also fed a proprietary flaxseed diet which boosts the Omega-3’s by up to 350% and lowers cholesterol level of the meat by as much as 40% versus conventional chicken, making it an even healthier protein option. The diet the chickens receive still contains corn and other nutritious vegetables that are needed for a balanced diet.

For this recipe I decided to sauté the chicken in a skillet, then deglaze the pan and make a lemon garlic sauce. Seriously – so good! It’s tangy, yet savory and so good! Description
A little bit of tanginess with savory makes this Lemon Garlic Chicken dish an easy and delicious weeknight dinner.
Ingredients
- 4 O Organics® Air Chilled Chicken boneless, skinless chicken breasts
- 2 TBS olive oil
- 4–6 cloves garlic, minced
- 2 medium shallots, minced
- 1 1/2 cups chicken broth
- 1/4 cup lemon juice
- 1 TBS red wine vinegar
- 1 TBS chopped fresh basil (or 1 tsp dried leaves)
- 1 tsp chopped fresh oregano (or 1/2 tsp dried leaves)
- 1/4 tsp ground black pepper
- 1 tsp cornstarch + 1 TBS water, whisked together
- Lemon slices, for garnish
- Chopped fresh parsley, for garnish
Instructions
- Place the chicken breasts in a large plastic zip-top bag and pound with a mallet until they are 1/4-inch thick even.
- Heat olive oil in large skillet over medium heat. Place chicken breasts in the skillet and brown on both sides, about 3-4 minutes each. Transfer the chicken breasts to a warm plate.
- Add the minced garlic and shallots to the skillet. Sauté 30-60 seconds. Add in the chicken broth, lemon juice, red wine vinegar, basil, oregano and pepper. Bring to a boil and continue to sauté until reduced by half, about 10 minutes.
- Add in the corn starch + water mixture and stir until the sauce thickens.
- Return the chicken to the skillet with the sauce; spoon the sauce over the chicken. Continue cooking the chicken until it reaches an internal temperature of 165°F.
- Garnish with lemon slices and chopped parsley, if desired.
