The Inside Scoop:
Welcome to November! Can you believe it’s already here?! Last weekend we took the little man out trick or treating. We took him last year, but he didn’t fully understand the concept. This year, after about two houses, he caught on that if he said trick-or-treat they gave candy. He was all business going from door to door collecting his treats. We ended at my parents house and had white chicken chili and cornbread for dinner. 🙂 We sure love our little cowboy!
The rest of the week has been pretty uneventful. Yesterday and today I am attending the Utah chapter of AADE Annual Conference. There were some great sessions yesterday and I’m excited to learn more today! I love being a certified diabetes educator and being able to help people with diabetes understand and improve their health.

I love this food holiday and have been celebrating it for years..sandwiches for breakfast, lunch and dinner and yes – an ice cream sandwich for dessert! This round-up gives some great healthy sandwich recipes to eat all year round!)
Spaghetti Pie with Seasonal Veggies by Mom to Mom Nutrition. (This recipe looks super easy to make and is kid-friendly. Adding to that, it is packed with sauteed veggies! Adding to my recipe box now!)
Fire Roasted and Pumpkin Chili via Danielle Omar for Cal-EZ blog. (This soup sounds and looks perfect for a chilly fall dinner. Comfort food made healthier and with a kick!)
Roasted Beet Hummus via Nourish RDs. (This colorful dish very appealing to the eyes and the stomach! I think even my two year old will love this one!)
