These Loaded Potato Latkes are a great way to use up leftover mashed potatoes and transform them into a delicious new side dish!
Earlier this week my husband cooked a wonderful meal for our family. I know, I got lucky with him! He cooks and occasionally does dishes. 😉 One of the side dishes he made for the meals was mashed potatoes.
One things to note about my husband when he cooks: he must think he has a family of of 8 instead of 4 (3 that eat the food right now) because he always cooks WAY too much! But don’t get me wrong, sometimes leftovers are great for lunch the next day. But sometimes you just need something different to eat. This week was one of those times.
I love re-purposing old things into new – and that certainly holds true for food. It helps reduce food waste while making something delicious to eat. Win-win! I took those day old mashed potatoes and added some goodies to ’em: cheese, real bacon bits and green onions. Add in an egg as a binder and you’ve got a winning recipe!

After you’ve combined all the ingredients, you simply take a large spoonful (about 2-3 Tablespoons at a time) and smash it down onto a preheated skillet. Cook on one side until golden, flip and cook on the opposite side. Remove the potato latkes from the skillet, top with some sour cream and some extra green onions and bacon bits. SO good! They’re like mini mashed potato pancakes. What’s not to like? You might want to purposely save leftovers just so you can make these yummy Loaded Potato Latkes!

Ingredients
- 3 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced green onion
- 1/4 cup real bacon bits
- 1 egg, lightly beaten
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
Toppings:
- sour cream or plain Greek yogurt
- extra diced green onion
- extra real bacon bits
Instructions
- Preheat skillet or griddle to medium heat. Place all the ingredients in a medium bowl, stir to combine.
- Spray skillet with non-stick cooking spray. Taking heaping spoonfuls of the potato mixture at a time (about 1/4 cup), place each spoonful on the skillet and smash down so it is flat. Cook one one side until it is golden brown, about 3 minutes. Flip over and cook on the other side until golden, approximately an additional 2-3 minutes. Continue until all the mixture is gone.
- Remove from the skillet. Serve topped with sour cream or plain Greek yogurt and extra chopped green onion and real bacon bits. Add extra salt and pepper, if desired.
