Spring has sprung and it is salad season! I love salads all year long, but once spring comes and the gardens are planted I just can’t help but want MORE fresh salads! A regular visitor at my house is this strawberry spinach salad with vinaigrette dressing. OMG! Talk about died and gone to salad heaven! The crisp spinach leaves mixed with the sweet strawberries is the perfect combination for a nice spring day…or any day of the year!
Then, the strawberry dressing is AH-mazing! Seriously, when we make this dressing we use it all week long on other salads and dishes. It’s super easy to make. And the best thing about DIY salad dressings? You can adjust the seasonings and ingredients to your liking! There’s no gettin’ that in store bought. All you do is throw the ingredients into a blending device like so:
Then you turn that baby on and blend it up until it looks something like this:
Then the dressing is ready to go! You can transfer the vinaigrette to a different container for pouring and storage in the fridge (if it makes it that far!).

They charge a TON for these at sports events and county fairs, but now you can make them at home for a lot less! As long as you save them as a treat and not an every day item, go ahead and indulge on these DIY sugared almonds! Just don’t use a plastic spoon when you make them like I did – mine melted a little on the tip…oopsie!

Description
Strawberry Spinach Salad with Strawberry Vinaigrette: Crisp spinach leaves combined with sweet strawberries topped with a tangy strawberry vinaigrette.
Ingredients
For the Dressing:
- 3 large strawberries
- 1/2 cup canola oil
- 1/3 cup red wine vinegar
- 1/2 clove garlic
- 2 TBS sugar (can substitute with your sweetener of choice)
- 1/8 tsp salt
- 1/8 tsp pepper
- 1/4 tsp. paprika
For the Salad:
- 1 bag baby spinach
- 1/2 lb. strawberries, sliced
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded coconut
Sugared Almonds: (½ cup slivered almonds, ¼ cup sugar, 1/8 tsp salt)
Instructions
For the Dressing:
- Place all ingredients in a blender. Blend well in until fully liquefied and smooth in texture.
To make the sugared almonds:
- Mix ingredients together in fry pan on medium heat. Stir constantly until almonds are toasted and sugar is caramelized.
For the Salad:
- Combine spinach, strawberries, cheese, and coconut.
- Add dressing and nuts to salad right before serving.
