When I first heard The Recipe ReDux was hosting a recipe contest sponsored by California Walnuts I was super excited. Walnuts are one of my favorite nuts! I especially like them dipped in dark chocolate… But I won’t be using chocolate in my recipe today.
Walnuts are a delicious and versatile ingredient. I had a hard time deciding what I wanted to create with this recipe challenge because of the many ways that walnuts can be used! They pair perfectly with other whole foods for nutritious, tasty meals.
Walnuts also provide important components of a healthy diet – a single ounce of walnuts has 2.5 grams of the essential plant-based omega-3 alpha-linolenic acid (ALA), 4 grams of protein and 2 grams of fiber. Healthy fats, protein and fiber all combined in one small package that will keep you feeling full!
Apple Walnut Pancakes
I could eat walnuts at every meal, but of course I decided to create a recipe with walnuts for my favorite meal of the day: breakfast! These pancakes are fluffy, yet have a great crunch to them as well, thanks to both the apples and the walnuts in them. The sweetness of the apples pairs really well with the nuttiness of the walnuts. Top that with some maple syrup and you’ve got a happy tummy. 🙂
I used white whole wheat flour to keep things whole grain and also added in plain Greek yogurt for some extra protein – plus, I like the subtle flavor Greek yogurt lends to quick bread recipes. Because of the walnuts and apples, the batter is slightly thick and lumpy – this is okay! You will need to use the back of spoon to smooth out the batter once you pour it onto the griddle or skillet.

Description
Wake up to a healthy breakfast of Whole Wheat Apple Walnut Pancakes. These hearty and scrumptious pancakes are fluffy and crunchy at the same time. They are sure to be a hit at the breakfast table any day of the week.
Ingredients
- 1 1/2 cups walnuts, chopped
- 1 cup white whole wheat flour
- 1 tablespoon sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup milk
- 2/3 cup plain greek yogurt
- 2 tablespoons canola oil (can sub in melted unsalted butter)
- 1 egg
- 1 medium apple, peeled and finely chopped
- non-stick cooking spray
Instructions
- Preheat griddle or skillet to medium heat.
- In a small bowl, whisk together chopped walnuts, flour, sugar, baking powder, baking soda, and salt; set aside.
- In a medium bowl, combine the milk, yogurt, oil (or butter), and egg. Add the dry ingredients and stir until just moistened. Fold in the apple pieces.
- Spray pre-heated griddle with non-stick cooking spray. Pour about 1/4 cup pancake batter onto the griddle at a time, spreading out with the back of a spoon (the batter will be slightly thick and lumpy – this is normal). Cook until bubbles start to form on the surface of each pancake and the edges are set, about 2 minutes. Flip over and cook an additional 1-2 minutes or until golden brown on the bottom side and fully cooked through.
- Serve warm topped with butter, syrup and additional crushed walnuts and apple pieces, if desired.
- Makes about 15 pancakes, or 5-6 servings (2-3 pancakes each).
