This Chicken Salad Sandwich Bowl is a healthier, deconstructed version of the classic sandwich that will bring a fresh taste to any lunch time routine!
It’s the 21st of the month, which means it’s time for another Recipe ReDux! I love participating in this monthly recipe challenge, as it gets me thinking outside the box while also giving me a bunch of great new recipes to add to my recipe box! This month’s theme is all about getting you out of lunch time boredom and giving you some new and creative recipe ideas to keep your taste buds excited:

My husband has a thing for chicken salad. When he and I were dating, on one special date when he wanted to impress me, he arranged a whole afternoon of activities, including lunch at a park. He packed a lunch with so much food we didn’t even come close to eating it all. The main course? Special recipe chicken salad sandwiches. It was delicious. That must’ve been what won me over… 😉
To this day he still loves that recipe. The only thing is, the original recipe has a ton of mayonnaise in it and not very many veggies. I decided to make my own version of his recipe making it healthier with no mayo (subbing in a homemade Greek yogurt dressing) and adding veggies…oh, and it’s in a bowl in salad form. 🙂
I made this while he was out working in the yard. When he came in and ate it he said it tastes just like chicken salad (I sure would hope so!). I told him he was very smart and smiled as he ate his veggies.

This recipe makes two bowls, so when making the salad divide all the ingredients between two bowls (except the dressing ingredients). This would be simple to take to work or school, as well. Just assemble the salad in a container with a lid (minus the dressing), take along the dressing in a separate container – put both in a cooler and keep chilled until you are ready to eat. Maybe even pack a side of fresh fruit, as well. Yum 🙂

Description
This Chicken Salad Sandwich Bowl is a healthier, deconstructed version of the classic sandwich that will bring a fresh taste to any lunch time routine!
Ingredients
For the salad:
- 2 cups baby spinach
- 1 cup cooked shredded chicken
- 1 large stalk celery, chopped
- 1 small/medium croissant, chopped into bite size pieces
- 1/4 cup dried cranberries
- 2 Tablespoons sliced almonds
For the dressing:
- 1/2 cup plain Greek yogurt
- 1/3 cup milk (can use buttermilk, if you want)
- 1 Tablespoon dried parsley
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried onion flakes
- 1/4 teaspoon dried chives
- 1/8 teaspoon dill weed
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
Instructions
For the salad:
- Divide each salad ingredient in half, as this recipe makes two bowls. Get out two bowls. Place 1 cup spinach each in two bowls, making for the bed of the salad. Dividing the remaining ingredients between the two bowls, top the spinach with the shredded chicken, chopped celery, croissant pieces, dried cranberries, and sliced almonds. Pour the dressing over top, stir to mix and enjoy!
For the dressing:
- Pour the Greek yogurt and milk in a small bowl, whisk together. Add the remaining ingredients and whisk until fully blended together. This recipe will make more than you need for the two bowls, but you can use it as a dressing for other salads or as a dip (as you would any other ranch dressing). Cover and refrigerate for up to 7 days.
