Energy Bites. I have seen many a variety of these floating around Pinterest for a while now. I have been wanting to make, but just haven’t gotten around to that. In my defense, there are MANY recipe ideas on my want-to-make list. There is just so many good food and so little time!
Last week I was at Costco and walked past a display full of dried dates. Something in the back of my mind said to me, “Energy Bites! Dates are the key ingredient in energy bites!” That was it. I grabbed a container and put it in my cart. I was finally going to make a recipe for energy bites.
This recipe is super easy to make. All you do is just put everything in a food processor or high power blender and push go.
After the mixture is the right consistency, you take it out and make your energy bites!

Give them to your kids as an after school snack, keep them at the office for an afternoon pick-me-up or use them as post-workout fuel. Keep them stored in the fridge in a sealed container for up to 2-4 weeks…if they last that long. My husband loved them so much, it was hard to even get them into bite form because he wanted to eat the mixture right out of the bowl!
With only 80 calories per bite (when making 13 bites), vegan and gluten-free, you can be assured these are a healthy, energy boosting snack to have on hand for you and your family!

Description
These Chocolate Banana Nut Energy Bites are the perfect snack for after school, post-workout or as an afternoon pick-me-up. Only 80 calories per bite! Vegan and gluten-free.
Ingredients
- 1 cup pitted dried dates
- 1 medium banana
- 1 cup walnut or pecan halves, plus 1/3 cup finely chopped nuts for outer coating
- 2 Tablespoons unsweetened cocoa
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- pinch of salt
Instructions
- Place all the ingredients in a food processor or high power blender. Blend until everything is chopped and it starts to form a ball. If it doesn’t form a ball, add some water – about 1 teaspoon at a time- until it does.
- Place the extra 1/3 cup finely chopped nuts in a small bowl.
- Take the mixture out 1 heaping Tablespoon at a time, roll it into a ball with your hands. Roll the ball in the chopped nuts and set on a parchment paper lined baking sheet or in a container for storing. Continue until the mixture is all used. The texture is pretty soft, so I recommend putting in the fridge to help them set-up a bit.
- Keep stored in the fridge for up to 2 weeks.
Notes
If your dates are dry, you may need to soak them in water for 5 to 10 minutes prior to using them for this recipe. If they are fresher and more plump you do not need to soak them.
