With Valentine’s day quickly approaching, I decided to keep with tradition and create a new sweet treat recipe! In years past I’ve made chocolate strawberry german pancakes and dark chocolate raspberry mousse cakes. I am a fan of the chocolate and fruit combination, if you can’t tell. This year I chose another red fruit, because we all know red is the best color for desserts on Valentine’s day, right?!
These Chocolate Pomegranate Truffles are divine! They have no sugar added to them – it all comes from the fruit inside (dates and pomegranate). Plus, they’re gluten-free, nut-free and vegan. If you have a specific dietary preference, these will probably still fit in your diet.
Using a food processor, these little chocolate pomegranate truffles come together quite easily. Your hands may be a little sticky by the time you’re done rolling them, but it’s totally worth it. With less than 100 calories, only 2 grams of fat (healthy fats from the flax!) and 3 grams of fiber per truffle, you can enjoy these guilt-free!

Description
Vegan, gluten-free and no sugar added Chocolate Pomegranate Truffles are a sweet treat you can feel good about eating! Made with dates, cocoa powder and flax seed, these are a perfect way to end a meal.
Ingredients
- 1 1/2 cups pitted medjool dates
- ~1 Tablespoon water
- 2 Tablespoons unsweetened cocoa powder
- 1/2 cup ground flax seed
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1/3 cup pomegranate arils
Optional:
- Roll in cocoa powder or finely chopped shredded coconut
Instructions
- Place pitted dates in a food processor. Blend until starts to form a ball. Add the water and pulse a few times. Add the cocoa powder, flax seed, cinnamon, vanilla and salt and process until well combined.
- Turn off and unplug the food processor. Fold in the pomegranate arils and stir until they are evenly distributed in the mixture.
- Form into 12-14 balls. If desired, roll in cocoa powder or finely shredded coconut for an outer topping/coating. Enjoy!
- Store in an air tight container in the fridge for up to 3 days.
