I’ll be the first to admit I have a sweet tooth. Yes, I am a dietitian and I love my sweets! Mostly chocolate; I’m not really into hard candy type sweets. You may have also heard me say before that I love baking. A love for sweets and baking is somewhat of a conundrum for a registered dietitian. Nevertheless, I do not let it get in the way of my interests. I still bake and I still eat sweets.
However, I eat sweets in moderation and when I bake I share those goodies with my family and neighbors so I don’t eat it all. Win-win!
The other evening after dinner I was craving a sweet baked good, so I looked in my cupboard to see what ingredients I had and decided to whip up some muffins. I usually opt for chocolate chip or blueberry muffins, but I was out of blueberries and wasn’t really feeling like chocolate chip (shocker, I know!). I did have a partially full bag of cinnamon chips my husband had bought a while back that needed to be used. So I tossed them in the batter.
As I was about to put the muffins in the oven I felt like they weren’t quite ready yet, as if they were lacking something. Well that something was streusel. And it’s a good thing I caught this mistake before they went in, because it took these muffins to the next level!
These can get a little messy when you’re eating them with the streusel crumbling every which way…but I love it! Just make sure you have a plate near by to catch it all!

Description
Topped with oats, nuts and brown sugar, these Cinnamon Chip Streusel Muffins are a great treat for brunch or dessert!
Ingredients
For the muffins:
- 1 cup whole wheat pastry flour
- 1/3 cup sugar (or sweetener of choice)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 egg
- 2 Tablespoons oil
- 1/4 cup cinnamon chips
For the streusel:
- 2 Tablespoons brown sugar
- 1/4 cup oats
- 1/4 cup chopped nuts
- 1/2 teaspoon ground cinnamon
- 1 Tablespoon oil
Instructions
For the muffins:
- Preheat oven to 425 degrees F. Spray muffin tin with nonstick cooking spray (I like Baker’s Joy)
- In a medium bowl, sift together the flour, sugar, baking soda, baking powder and salt. Make a well in the center of the mixture.
- In a separate small bowl, whisk the milk, egg and oil together. Pour the liquid into the well you made in the dry mixture. Slowly incorporate the wet ingredients into the dry, about 12-16 strokes (do not over-mix). Add the cinnamon chips and stir to combine.
- Pour equally into 6 muffin cups, each about 3/4 full.
For the streusel:
- In a small bowl, combine the brown sugar, oats, nuts and cinnamon. Add the oil and stir until the oil is evenly coated over the oat mixture.
- Sprinkle the streusel over top each of the muffins. Slightly pat down, so it will stay on when the muffins rise.
- Bake muffins for 15-20 minutes, or until golden brown on top and a toothpick inserted in the center comes out clean.
Note: Although these have some healthy ingredients in them (whole wheat flour, oats, nuts) it does not mean they are “healthy”. These are still considered a treat and should be eaten in moderation!
