It’s the 21st of the month. If you don’t know what that means, I’m going to tell you right now. It’s Recipe ReDux time! The Recipe ReDux is a monthly recipe challenge created by registered dietitians focusing on healthy food that tastes delicious. There are so many different types of dishes and flavors to explore with this month’s theme, I didn’t even know where to start. I thought and thought and thought and couldn’t decide on anything. Finally, earlier this week I knew I needed to choose something. I was going to the grocery store and happened to see mini phyllo cups in the freezer section. I picked those up and I immediately knew ricotta was going to be in them.
I have been a fan of ricotta lately, especially after trying a recipe for Ricotta Berry Oatmeal Cups from my dietitian friend Jessica over at Nutritioulicious. I have been experimenting using it in different dishes and love the texture, creaminess and flavor it lends to recipes as a whole. It is very versatile and can be used in savory dishes, such as lasagna and manicotti, to sweet treats, including cannoli and some cheesecakes. At first when I thought about my recipe for today, I was going to do a dessert recipe with some sort of berries on top. But I have seen quite a few berry topped tarts lately and wanted to do something a bit different – so I went more to the savory side. And of course, being a dietitian, I had to include a vegetable. Cucumber popped into my head and the rest is history.

They are sophisticated looking enough to be served at more formal affairs, including baby or wedding showers, graduation parties, but still fun and light enough to serve at really any event, such as birthday parties, picnics, tea parties, pot lucks, and more. You could even just serve them as a fun mid-day snack for you and your kids.
Oh, and did I mention these are SUPER easy to make? The mini phyllo cups are already baked and ready to be filled – so no work needed there besides taking them out of the package. For the “work”, slice your cucumber and mince the dill, then simply combine the ricotta mixture/filling ingredients and spoon it into the mini phyllo cups. Top each cup with a cucumber slice and you are done! Fancy looking finger food without the effort!

Description
These easy Cucumber Dill Ricotta Cups are refreshingly healthy and delicious. They are the perfect appetizer for any party or gathering – from bridal showers to outdoor picnics!
Ingredients
- 15 prebaked & frozen mini phyllo cups
- 1/2 small cucumber, sliced
- 1 cup ricotta cheese
- 1 tablespoon minced fresh dill weed
- 1 teaspoon lemon juice
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
Instructions
- Remove the phyllo cups from the packaging and set aside until ready to be filled.
- Hand wash your cucumber with water, then slice into 15 quarters (or halves, depending on the size of your cucumber) and set aside. Mince the dill.
- In a small/medium size bowl, add the ricotta, dill, lemon juice, salt and pepper. Stir the ingredients until combined. Spoon about 1 tablespoon of the mixture into each phyllo cup.
- Top with a cucumber slice. Garnish with extra dill, if desired. Arrange on serving platter and enjoy!
