Grilled Apricots with Honey Whipped Cream make for a perfectly portion-sized treat on a hot summer day!
I’m baaaaack!
Sorry I have been MIA lately. Summer has arrived and real life + other work has gotten in the way with blogging. I’ve been enjoying my kids, my hubby, working some, training for a half marathon, and simply loving life. If you follow me on Instagram, I usually post there even when I’m not blogging – so follow along! I am starting to get back on the blogging band wagon and into the swing of things again. I’ve also got some pretty sweet things planned for the blog coming in the next few months, too – so stay tuned. I am excited for the future of Your Choice Nutrition!
With summer in full swing, so is bounty of fruits and vegetables. We planted our garden a little later than usual, but I am hoping we still get some good produce from it. Fruit trees are one of my favorite things, too. When I grow up I want a little orchard in my backyard full of fruit trees! My parents have a tart cherry tree and we had a TON this year. The peach tree in my backyard now seems promising. But right now, my neighbor’s apricot tree is ripe and ready for the picking! In fact, I did pick two grocery bags full of ’em.
The timing is perfect for this month’s Recipe ReDux theme:

Now I know apricots sliced in half aren’t the most creative shape, but I think grilling them is a bit different. Usually when I think of grilled fruit I picture grilled peaches or pineapple…so why not apricots?!
The best thing about this recipe is these little fruits are the perfect size for a summer treat – portion control built in! Sweet treats are something I don’t think I will ever give up, but making fruit part of my dessert, I don’t feel guilty one bit. Apricots are a good source of vitamin A, C, potassium and fiber. Who’s going to complain against that?

Simple, yet deliciously satisfying. If you need a quick dessert – these are your answer. Since I have two big bags full of apricots, I think I may be having quite a bit grilled treats for the next few days!

Description
Fresh grilled apricots topped with a honey whipped cream, a perfect treat for a hot summer day!
Ingredients
- 1/2 cup heavy whipping cream
- 2 teaspoons honey
- 1/4 teaspoon vanilla extract
- 4 apricots
- 1 Tablespoon butter, melted
- extra honey, for drizzling on top
Instructions
- Place the heavy whipping cream, honey and vanilla in a bowl and whip with a blender until stiff peaks form, about 4-5 minutes. Set in the fridge until ready to use.
- Turn on your grill to medium heat (alternatively, you can grill your apricots in a stove top grill pan, if you have one). Wash your apricots, removing any debris. Slice the apricots in half and remove the pit. Brush the melted butter on each half. Place the apricot halves, cut side down, on the grill. Cook about 3-4 minutes, or until the fruit is becoming soft and grill marks are on the apricots. Remove from the heat.
- Put apricot halves in a serving dish, 2 at a time, and place a Tablespoon scoop of whipped cream on top on each pair. Drizzle extra honey on top. Garnish with basil or mint leaves, if desired. Serve immediately.
