These Hummus Chicken Enchiladas are an easy, nutrient-packed dinner. A delicious recipe that will please everyone in the family.
Hummus. Have you tried it? I first tried hummus in college thanks to one of my professors. Every Friday she would bring in a new recipe made with foods that were new to most of us. We all loved that class! I really enjoyed exploring new foods that I hadn’t tried before, or learning new ways to cook some of my favorites.
I think that is maybe why I love blogging and bringing you all new recipes. First, I love food. Second, I love cooking and baking. And third, I love trying new combinations of ingredients and flavors. This recipe comes from one of my mom’s recipes, with some adjustments to make it a bit healthier and add in some different flavors.
The hummus really is the star of this recipe. Instead of putting regular beans in the recipe, by adding hummus (main ingredient = pureed garbanzo beans) you’re still getting all the health benefits but in a smooth, creamy and flavorful way! Hummus provides a variety of nutrients that up the nutritional value of recipes, especially when used in place of other high-calorie ingredients. In the case of my mom’s recipe, I actually removed canned cream of chicken soup and subbed in the hummus.
The best part of this Hummus Chicken Enchiladas recipe (besides the hummus, of course) is how easy they are to prepare. I used rotisserie chicken and shredded/chopped it up myself, which made that part super-easy. If you wanted to cook some chicken breast in a skillet yourself and chop it up, go ahead. Then, chop your veggies and mix all the stuffing ingredients in a bowl. Stuff your tortillas, roll them up and put ’em in the pan and sprinkle some cheese on top! Bake and wait. So. Easy.
When they’re done, go ahead and top with your favorite toppings, such as salsa, guacamole, extra plain Greek yogurt (or sour cream), tabasco sauce, etc. The options are endless! My whole family loved this recipe, and I’m sure yours will, too! Even if you’ve never tried hummus before, this is a great way to introduce it into your diet.

Description
These Hummus Chicken Enchiladas are an easy, nutrient-packed dinner. A delicious recipe that will please everyone in the family.
Ingredients
- 3 cups cooked cubed or shredded chicken (I used rotisserie chicken)
- 1 10 oz. container Sabra Classic Hummus
- 1 cup Greek yogurt
- 1 cup + 1/4 cup shredded cheese, divided
- 1 can diced green chilies
- 1 medium bell pepper, diced
- 2 stalks green onion, diced + more for garnish
- 1/2 teaspoon paprika
- 1/4 teaspoon ground black pepper
- 10 whole wheat tortillas
Instructions
- Preheat oven to 350 degrees F. Spray a 9X13 in. baking dish with nonstick cooking spray.
- In a large bowl, combine the chicken, Sabra hummus, Greek yogurt, 1 cup shredded cheese, green chilies, bell pepper, green onion, paprika and black pepper. Stir until evenly mixed.
- Place approximately 1/2 cup mixture into a tortilla, then roll it up and place in the prepared baking dish. Continue doing this with each tortilla. Once all the tortillas are in the dish, sprinkle the remaining cheese on top.
- Cover the baking dish with foil and place in the oven. Cook for 20 minutes. Remove the foil and continue cooking an additional 5 minutes, or until the cheese is melted. Remove from the oven and garnish with additional diced green onion.
- Optional toppings: salsa, diced avocado/guacamole, sour cream or plain Greek yogurt, tabasco sauce, etc.
