Good Monday, all! It’s the 21st of the month – and do you know what that means? It’s Recipe ReDux time!!! I love participating in these recipe challenges each month, as it pushes my creative envelope just a little bit further every month. I also get inspired by the delicious recipes posted by all the other registered dietitian and healthy lifestyle bloggers.
This month’s theme is one I think you’ll love, especially if you like easy + simple recipes.
7-Ingredient (Or Less) Recipes: It’s Income Tax Season, so our brains could use some easy arithmetic; as in seven-ingredient-or-less recipes. Show us the healthy, no-brainer dish you fix for breakfast, lunch or dinner.
I know I’ll be pinning a lot of recipes from this month’s link-up! 7-ingredients or less is brilliant. When I have a toddler running around, a baby crying and the house to be cleaned, 7 ingredients is about all I can handle some nights.
This recipe is not only 7 ingredients, but it is super simple – including clean-up! The meal is cooked and eaten in a foil packet. Simply throw the tin foil away when you’re done! No scrubbing pots, pans or plates. Oh, and did I mention the ENTIRE meal is just 7 ingredients?! You’re welcome. 🙂

I was a little worried at first how good this meal would taste, with it being so simple and all. But I am glad to say that it is DE-licious! My husband even commented on how tasty it was and, at the same time, surprised at how easy it was to make. (Here’s to hoping he’ll make it for me next time?) You could add some rosemary and thyme if you really wanted to up the ante on the flavor, but it is not necessary. The simple salt and pepper seasoning go well with the olive oil and lemon juice to flavor the veggies and chicken nicely.
When you open up your foil packet after cooking, there will be some juice in the bottom. You can drain the juice, or you can keep it in there and spoon it over the top of the chicken and veggies, giving them more flavor. Either way, you’re sure to enjoy this healthy & delicious meal.

Description
Chicken, asparagus and potatoes all tossed in lemony goodness. With only 7 ingredients, your entire meal is ready in one foil packet – with clean-up a cinch!
Ingredients
- 4 cups cubed red potatoes
- 1 bunch asparagus (about 12–16 spears)
- 4 teaspoons extra virgin olive oil
- salt
- ground black pepper
- 2 lemons
- 4 boneless, skinless chicken breasts (or 8 boneless, skinless chicken tenders)
- Optional seasonings: rosemary, thyme, oregano, basil
Instructions
- Preheat oven to 375 degrees F. Tear 4 long sheets of tin foil (mine were about 15 inches long), set aside.
- Wash & chop the red potatoes into 1/2 inch cubes. Place 1 cup of the cubes potatoes onto each sheet of tin foil.
- Wash the asparagus and trim the bottoms, if needed. Place 3-4 spears onto each sheet of tine foil along with the potatoes.
- Drizzle 1 teaspoon of olive oil onto each sheet of asparagus/potatoes. Cut 1 lemon in half and hand squeeze the juice over all 4 sheets as well. Lightly toss to fully coat them. Sprinkle salt, pepper and any additional desired seasonings, toss until evenly seasoned.
- Salt and pepper the chicken breasts (or tenders) on each side. Place 1 chicken breast (or 2 chicken tenders) atop each pile of veggies. Slice the remaining lemons and place 2 slices on top of each chicken piece.
- Fold the sides of the tin foil and wrap up, so it is completely closed.
- Place all 4 packets on a baking sheet and place in the oven. Bake for about 30 minutes or until the chicken is fully cooked (165 degree F internal temperature) and the potatoes are done.
