Link Love: A weekly round-up of good reads and healthy eats – plus a little bit of real life.
In Real Life:
Today is my last day at the Urban Indian Center of Salt Lake. I have really enjoyed this job – my coworkers, the clients I work with, the atmosphere – and am really going to miss it all. I have cleared out my belongings from my office and will say goodbye. Leaving is bittersweet for me. I am happy to be able to spend more time at home with my kids, but sad to leave amidst all the current happenings and progress the health program is making at the Center. I wish I could be there to help it happen and see it grow.
But I know where I need to be at this time in my life.
On the bright side, I won’t be completely giving up my career as a dietitian. I love being a dietitian WAY too much to quit altogether. Things fell into place just perfectly and I will be working very part-time (about 1 day a week) at a local WIC clinic that is a lot closer to my home. The commute will be about 30 minutes less and not on any freeways! I will be able to get out of the house, have some adult conversation and work with clients face-to-face.
On the remaining 6 days a week I will be home with my babies, watching them grow and learn. Oh, and I’ll be blogging, too! I will now, hopefully, have more time to dedicate to this little blog of mine. I hope you will all continue to follow along as I strive to improve my blogging techniques – recipe development, food photography, writing, research, and just being real – and provide some content you relate to and enjoy.
Now for some Link Love. I really enjoy reading and drooling over other RDN and healthy living bloggers articles and recipes. It gives me a broader perspective of health and nutrition, as well as a LONG list of food I need to make! How to Work Out When You Don’t Have Time to Work Out via Sinful Nutrition. (Okay, the title of the article say it all – that’s my life it seems. Luckily, Emily offers some great tips and quick workouts to help you squeeze in some physical activity even on busy days!)
Healthy Kitchen Hacks #35 via Teaspoon of Spice. (If you haven’t ever read any of the kitchen hacks on Teaspoon of Spice before, you are missing out! This week there are some helpful hacks including preserving lemons! I didn’t know you could do that, but now it is on my list to do!)
Stop “Should-ing” on Yourself! via Dr. Jo. (This really resonates with me. I had a nutrition professor in college who taught us “You shouldn’t should on yourself.” This article does a great job at explaining why along with examples to change the shoulds into coulds.)

Peachy Keen Overnight Oats via Kiss in the Kitchen. (One word: Mmmmm! –if that is even a word)
Roasted Eggplant Coconut Curry via The Grateful Grazer. (I have been craving me some curry lately and this looks SO good! It might just be on next weeks menu plan.)
Vegan Taco Lettuce Wraps via Delish Knowledge. (These look like a great refreshing and healthy dish! I can just imagine the crunch of the lettuce as I bite into these tasty little wraps.)
Spaghetti and Spiralized Zucchini with Lemony Pesto via Mom’s Kitchen Handbook. (I’ve made spaghetti before and I’ve made spiralized zucchini before but I’ve never thought to combine the two. This looks so good and brings together the best of both noodle and zoodle worlds!)
Homemade Ricotta via Smart Nutrition. (I have been on a ricotta kick lately, so it would be fun to learn how to make it on my own – and Jessica shows us how to do it in 3 easy steps!)
Thai Chicken Meatballs via The Lean Green Bean. (Thai + meatballs = I HAVE to try these! Lindsay always has delicious and creative recipes!)
