This Pumpkin Pasta Sauce is a savory blend of pumpkin and tomatoes. Serve over your favorite pasta or even sautéed vegetables!
It’s been a while since I have participated in the monthly Recipe ReDux challenge – before I had sweet baby E. I have still been a little inconsistent with blog posts as well, because her cute little face (and sometimes screaming face) takes all of my time. I’m trying to get back into the groove of things and to a regular posting schedule (my goal is 2 times per week).
Forgive me if I miss a post or two or three, as my family is my #1 priority. In fact, since having baby E I’ve gone back and forth so many times as to whether I should keep this blog up. Blogging takes a lot of time, dedication and hard work. And while I can do it from home, it still takes away time from my kids and husband. I love cooking, baking, blogging, and sharing recipes and nutrition information with all of you! I’ve decided to keep it going for now – so thank you for making it all worth it!
This month’s Recipe ReDux theme fits perfectly for this time of year and includes one of my favorite fall ingredients:
“Fresh from the Pumpkin Patch: Don’t forget to think beyond ‘pumpkin spice’ to all the ways you’re serving pumpkin these days. Of course, if pumpkin spice is what you’re craving – because it’s finally getting cold where you live, go pumpkin spice all the way.”
I love pumpkin and pumpkin spice. A couple of years ago I found a pumpkin pasta sauce at Costco and was in pumpkin heaven! I haven’t had the time to go to Costco (re: baby E), so I haven’t had any of their sauce this year yet. With everything pumpkin around me, I needed this sauce in my life so I decided to re-make it at home.
This pumpkin pasta sauce is a savory blend of pumpkin, tomatoes, onions, garlic and other seasonings. It has a hint of sweetness from cinnamon and honey. You can serve it over your favorite cooked pasta or even sautéed vegetables.
