About a week or so ago I logged onto Pinterest to give me ideas for some dinner recipes. Well, little did I know that all I was going to see was EVERYTHING pumpkin! You name it, there was pumpkin in it or on it. Pumpkin crafts, pumpkin desserts, pumpkin activities, pumpkin snacks, pumpkin lunch, pumpkin dinner, etc. Truth be told, I was a little overwhelmed with the explosion of pumpkin on my screen and slightly annoyed, too. I mean, it wasn’t even September yet and pumpkin had threw up on my computer screen! I wanted to soak up every last bit of summer that I could, and accepting all things pumpkin meant summer was over and fall had begun.
Well, as many things do – as I kept seeing pumpkin everything appear day after day it started to grow on me. The mornings were starting to feel a little more crisp in the air (cue sweater weather) and I could imagine the leaves turning vibrant reds and oranges. And before I knew it, I wanted pumpkin! I must be brain washed or something, but now I want to make all the things pumpkin!
So I waited until September first to share my first pumpkin recipe of the season. This recipe also happens to have one of my other favorite fall and winter ingredients in it – oats! To be exact, oatmeal. I LOVE oatmeal in the fall and winter time. I’ll eat it nearly every morning! One – because they’re yummy, two – because they are easy to prepare, three – because they can be made with so many variations, and four – because they are healthy for you! I could probably name a few more reasons, but I’ll stop at four.
These pumpkin pie overnight oats taste just like pumpkin pie – in oatmeal form. What could be better?! And as I mentioned earlier (see #3), they are SO easy to prepare. The night before, combine all the ingredients, put in a jar, seal and place in the fridge. The next morning your delicious pumpkin pie overnight oats are waiting for you! Open up the jar and enjoy! You can eat them cold or heat them up in the microwave, either way they are great. Oh, and you can’t forget the dollop of whipped cream – that really makes just the difference to make it taste just like pumpkin pie.

Description
Enjoy the flavors of fall with this easy grab and go breakfast option of Pumpkin Pie Overnight Oats!
Ingredients
- 1/3 cup pumpkin puree
- 1 cup milk
- 1/4 teaspoon pumpkin pie spice
- 2–3 Tablespoons pure maple syrup
- 1/2 teaspoon vanilla extract
- 1 cup rolled oats
- whipped cream, if desired
Instructions
- In a small bowl, whisk together the pumpkin puree, milk, pumpkin pie spice, maple syrup and vanilla. Stir in the oats.
- Pour the mixture into two small (12 oz) mason jars, distributing evenly. Seal with lids and place in the refrigerator overnight.
- In the morning, take out and enjoy cold, or you can heat it in the microwave (lid removed) for 1 – 1 1/2 minutes (depending on your microwave). If desired, serve with a dollop of whipped cream.
