You know those days when you are wanting something sweet? Okay, so that might be every day – I am the only one? If you’ve followed me for any amount of time, you know that I love sweet stuff. You will also know that this presents a problem, as most sweet stuff isn’t very nutritious. This is where moderation and self control comes in. Oh, and also this is where I come in – the dietitian in me, I mean – to find healthier alternatives to eat while still satisfying my sweet tooth.
Today I’m sharing an easy, fool-proof (healthier) recipe for Raspberry Mint Key Lime Mini Pies! First off – they use Keebler® Ready Crust® Mini Graham Cracker Reddi-wip® original Pie Crusts, so there is portion control built in! Second, they are made with Oikos® Key Lime Greek Yogurt, a healthier option instead of traditional pie filling. Third, you top them with a swirl of Reddi-wip® original cream – LOVE! 3 great ingredients combined to make these #EffortlessPies, but will still impress anyone you feed them to. Plus, they are so easy to make your kids can even help you put them together! Oh – and did I mention they are easy clean up? This is what I’m talking about when I mean they are truly effortless.
Speaking of kids, now that I have two kids I totally understand what people have been saying about shopping with their kids. It sure can be a hassle getting two kids into the car and going to different stores for all the items you need. Good thing for me, I was able to stop at my local Wal-Mart to pick up all of the ingredients in a one-stop shopping trip. It’s as easy as 1, 2, 3 (plus some extras!). In, out and the kids haven’t had any tantrums and I am still sane. 🙂
- The Keebler® Ready Crust® Mini Graham Cracker Pie Crusts (6 count) can be found on the baking aisle next to the other ready pie crusts and pie fillings.
- Oikos® Key Lime Greek Yogurt is found in the dairy/yogurt section.
- Reddi-wip® original 13 oz is just down from the milk.
- Extras! Be sure to stop by the produce section for some fresh produce and herbs to mix in.
I chose to add in fresh raspberries and mint leaves into my mini pies. I’m telling you, this is a winning combo! All you have to do is lightly chop/mash the raspberries, mince the mint leaves and mix them into the Oikos® Key Lime Greek Yogurt. Divide the yogurt between the Keebler® Ready Crust® Mini Graham Cracker Pie Crusts and top with some Reddi-wip® original cream. Then enjoy this healthier dessert with your friends and family – or keep it to yourself – just sayin’…

Ingredients
- 1/4 cup fresh raspberries, diced
- ~10 fresh mint leaves, finely minced
- 1– 5.3 oz container Oikos® Key Lime Greek Yogurt
- 2 Keebler® Ready Crust® Mini Graham Cracker Pie Crusts
- Reddi-wip® original spray cream
Instructions
- Dice the raspberries and mince the mint leaves – place together in a small bowl and stir. Add the Oikos® Key Lime Greek Yogurt, stir well to combine.
- Evenly divide the yogurt mixture between the two Keebler® Ready Crust® Mini Graham Cracker Pie Crusts.
- Top with Reddi-wip® original cream. Serve immediately and enjoy!
