Looking for a way to use up some ripe bananas? Then I’ve got the perfect recipe for you! These pancakes are whole wheat, they are vegan, they are simple to make, and they are absolutely delicious!
INGREDIENTS
This recipe is about as simple as it gets. I use white whole wheat flour, which still provides all the fiber and nutrients of traditional whole wheat flour, but with a lighter texture. I love using it in baked goods.
Use any plain (unsweetened) dairy-free milk you want. I used pea protein milk and the pancakes turned out delicious. Additionally, choose your favorite dairy-free or vegan chocolate chips.
This recipe is sweetened mostly by the bananas, but the maple syrup adds just that extra flavor and sweetness that balances out the flavor profile of these pancakes perfectly. In fact, these pancakes are so good that I love eating them plain with no additional toppings – though a bit of nut butter on top takes these to the next level.
The batter will be thick and lumpy – that’s perfectly fine! These pancakes turn out thick and fluffy, especially if you let the batter sit for about five minutes before pouring it onto the griddle. This allows time for the baking powder to do its magic and create air bubbles throughout the batter.

Can you freeze these pancakes?
Yes! This recipe makes a large batch (20 pancakes!), so I love freezing some of them for later. When freezing your pancakes, place a small sheet of wax or parchment paper in between each pancake. This makes it so they are easier to separate when getting them out of the freezer. If you don’t they will most likely stick together when frozen!
Store in an airtight freezer safe bag or container and store frozen for up to 3 months for best results. When you are ready to eat, simply remove however many you want from the freezer, then reheat in the microwave.
Can I give these pancakes to my baby?
These pancakes would be great for baby if you omitted the chocolate chips. The warm, gooey chocolate chips tend to get messy. If you omit the chocolate chips, you could whip up a batch of these pancakes and give some to your baby or toddler for breakfast or a snack. You won’t have to worry about a big chocolatey mess, and your child will be fed and happy.
Are vegan pancakes healthy?
Simply because something is “vegan” doesn’t mean it automatically equates to health – it means it is plant-based. Sugar comes from a plant. Fats can still be plant-based. You can have a vegan chocolate cupcake with sprinkles that is full of calories, fats and sugar – and delicious goodness. As with all things, it’s your overall diet quality that matters.
With that being said, these vegan banana chocolate chip pancakes are a healthy option for breakfast – or any meal, really. They are whole wheat, contain fiber, protein, vitamins, minerals, and are mostly sweetened by the bananas, with the addition of a small amount of pure maple syrup.

Ingredients
- 3 medium ripe bananas
- 2 cups dairy-free milk (such as soy, oat, almond, pea, etc.)
- 3 tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- 2 cups white whole wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 3/4 cup vegan semi-sweet chocolate chips
Instructions
- In a medium bowl, mash the bananas. Whisk in the dairy-free milk, maple syrup, and vanilla.
- Stir in the flour, baking powder, cinnamon, and salt until just moistened. Gently fold in the chocolate chips. The batter will be thick.
- Heat a griddle over medium heat, or to about 300°F, and lightly spray with nonstick cooking spray.
- Pour about 1/3 cup of batter onto the griddle at a time. Cook for 2 to 3 minutes or until the edges are set and the bottom in golden. Flip over and cook an additional 1 to 2 minutes, or until golden on the opposite side. Continue cooking until all the batter is used.
- Serve with your favorite toppings, such as nut butter, pure maple syrup, additional banana slices, or fresh berries.
Notes
If you have an extra 5 minutes, I recommend letting the batter sit for 3 to 5 minutes before pouring onto the griddle.
