I started rummaging through my spice cupboard to find other fall spices that would compensate for my lack of pumpkin pie spice. I rounded up 5 spices that are usually found in pumpkin pie spice and sprinkled them into my muffin batter. And guess what? They turned out just as delicious and pumpkin pie spice-y as ever.
After that almost baking mishap, I got to thinking - if I don't want that to happen again, I need to get some more pumpkin pie spice ASAP! Well, what's quicker than making it right then and there in my kitchen? I certainly couldn't make a trip to the store and back in under 5 minutes. Plus, I already had all the makings for homemade pumpkin pie spice, so why not use what I already have? No wasting spices and no spending more money. It was decided.
