This Veggie Packed Chicken Alfredo Pizza has so many vegetables on it, it’s hard to fit them all on top! A little indulgence with lots of nutrition, this dish is worthy of place at your table on pizza night!
A while back, in my efforts to make weekly meal planning a bit easier, I wanted to turn most of my weekdays into themed dinner nights. For example, Mondays = meatless monday. That one was easy. The rest I was having a hard time coming up with.
Then I heard that many families have Friday night pizza nights. I was sold. Who doesn’t love pizza? And every week?! It went right on my calendar. I love coming up with new ways to enjoy pizza. I even have a dedicated pizza board on Pinterest. Love.
I wasn’t originally planning on using this recipe for the blog, but after making and tasting it I couldn’t help but share it with all of you! I used a jarred Alfredo sauce, but if you have the time and want to make your own sauce go for it!
Rule #1 about most of the recipes I make is you don’t have to stick 100% to the ingredients. Customize it to your likes as well as what you have in your fridge or cupboards! Really, this could be a no recipe recipe. You don’t have to use exactly the same vegetables I chose to put on my pizza. If you don’t like spinach, skip it. A fan arugula? Toss it on!
We baked our pizza on a baking sheet with a silicon mat, but feel free to use an actual pizza pan or stone if you want. Just make sure if you use a silicon baking mat, not to use metal knifes or pizza cutters to slice the pizza. We use a pizza cutter similar to this one and it works really well on the silicon mats.

This Veggie Packed Chicken Alfredo Pizza has so many vegetables on it, it’s hard to fit them all on top! A little indulgence with lots of nutrition, this dish is worthy of place at your table on pizza night!
Ingredients
- Prepared pizza dough (you can buy store-bought or try making this whole grain crust)
- 1/2 pound boneless, skinless chicken breasts (alternatively, you could use store-bought rotisserie chicken)
- 1 Tablespoon olive oil
- desired seasonings for chicken (salt, pepper, garlic powder, etc)
- 1/4 onion, diced
- 2 green onions, diced
- 1/2 green bell pepper, diced
- 1/2 red bell pepper, diced
- 1 cup packed baby spinach
- 2/3 cup Alfredo sauce
- 1 cup mozzarella cheese
Instructions
- Preheat oven to 410 degrees F.
- Dice your chicken into thin 1-inch strips Place in a skillet over medium-high heat with the olive oil and desired seasonings. Cook until fully cooked and no longer pink, about 5-10 minutes. (if you are using rotisserie chicken, shred chicken off the bone and skip the cooking part). Set aside.
- Chop and dice the onions, bell peppers. Tear the spinach into smaller pieces. Set aside.
- Roll your pizza dough out flat on your pan. Spread the Alfredo sauce evenly over the dough. Next sprinkle the mozzarella cheese over top the sauce.
- Continue topping your pizza with the cooked chicken and the diced veggies.
- Place in the oven and cook for about 18-20 minutes, or until the crust is starting to brown. Slice, serve and enjoy!
