I’m back this month with another Recipe ReDux recipe! This month’s days just happens to fall on Earth Day! I’m posting a day early, so I hope you’ll forgive me for not posting on the exact day.

When I finally got around to making this month’s recipe, I took a look at what I had in my kitchen that I normally would toss out. I thought about a post I wrote a couple years ago about how to reduce food waste. Then, I saw a bag of rolls sitting on the counter that were nearing their “best by” date.
My husband sometimes gets cravings for rolls. You know, sometimes you just need those carbs. But the thing is, he’ll eat one or two rolls and then be done with them. Then we have three-quarters of a bag of rolls that sits on the counter for a week or two. Until the day I notice them sitting there, and toss them out because they have gone stale or started growing mold.
I don’t know why because I LOVE carbs, but rolls just aren’t my thing. Unless it’s amazing bread – then I’ll have one. But everyday ordinary grocery store rolls don’t have anything over me.

Share on XSo back to this recipe – I found these rolls that I normally would end up tossing out and started thinking about what I could make with them. My husband, the roll buyer, looked at me and said, “Bread pudding, of course!” One of his all time favorite desserts is bread pudding. So bread pudding it was – skillet blackberry bread pudding, to be exact!
To be honest, I don’t think I’ve ever made bread pudding myself. Every time we’ve had it at our house my husband has made it. I wanted this recipe to be simple, yet look beautiful and taste delicious. I think I hit the nail on the head with this one.
Because blackberries tend to be a little tart, I decided to cook them. I put them in the skillet with some honey, lemon juice and cinnamon. I gently mashed the blackberries to release some of the juice and make them softer to better match the consistency of the pudding. I continued cooking until it started to form a syrup-like consistency.
After the blackberries are ready I added in the rest of the ingredients and stirred to combine. I put the skillet in the oven and baked for 20 minutes. To add some color contrast, as well as some extra flavor, I sprinkled shredded coconut on top. For never making bread pudding before, I’d have to say this skillet blackberry bread version is pretty easy!
When my husband got home from work and had some he was in heaven. I was afraid he wouldn’t like it because he can be picky about his bread puddings, but he loved this skillet blackberry bread pudding. Whew! I passed the husband taste test!

Ingredients
- 6 oz. blackberries, rinsed
- 2 Tablespoons honey
- 1 teaspoon lemon juice
- 1/2 teaspoon ground cinnamon
- 3 1/2 cups cubed day old bread
- 1 cup coconut milk
- 1–2 Tablespoons brown sugar (depending on how tart the blackberries are)
- 1 teaspoon vanilla extract
- optional topping: unsweetened shredded coconut
Instructions
- Preheat oven to 350 degrees F.
- In a skillet over medium heat, add the blackberries, honey, lemon juice and cinnamon. Stir to combine, gently mashing the blackberries as you stir. Continue cooking, stirring continuously, for approximately 7-10 minutes or until the mixture is slightly syrupy.
- Add in the bread, coconut milk, brown sugar and vanilla extract. Stir to combine.
- Place in the oven and bake for 20 minutes.
- Remove from oven and sprinkle shredded coconut on top as a garnish. Serve warm. Enjoy!
