You know when fall sets in. The temperatures start to drop, sweaters come on, the leaves on the trees begin to change to hues of bright reds and oranges, school is back in session, and pumpkin everything makes an appearance. I love this time of year.
Another tell tale sign of the season is the last harvest of our garden. Every year before the first freeze, we try to go to our backyard garden and gather any vegetables that are left and put them to good use in the kitchen or store them in the cellar for the winter. Speaking of the kitchen, fall wouldn’t be fall without some baking and the aroma of cinnamon and spice in the house. And I found just the perfect recipe for that!
I didn’t want a pumpkin flavored granola. As much as I love everything pumpkin, I needed a break. #sorrynotsorry This Fall Harvest Granola is full of the best of the best seasonal ingredients and spices. From pecans to pepitas (I snuck in pumpkin seeds without it being pumpkin flavored), dried cranberries to pure maple syrup and cinnamon, cloves and nutmeg – this has it all!

Then after devouring some straight off the baking sheet, I had to move it far from my reach because it is addicting! A serving size is 1/4 cup, so it’s important to keep portion size in mind or else things could get out of hand very quickly, if you know what I mean.
This would also make a great neighbor gift, if you’re into sharing things. This recipe makes about 6 cups, so if you got small mason jars, poured some Fall Harvest Granola in and tied a bow around it you would be set. And your neighbors would love you. Trust me.

Description
Indulge in the flavors of the season with this Fall Harvest Granola. Filled with spice and everything nice, this is a must-make fall recipe! Vegan and gluten-free.
Ingredients
- 3 cups rolled oats
- 1 cup chopped pecans
- 1 cup pepitas (shelled pumpkin seeds)
- 1/4 cup ground flax seed
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/8 teaspoon ground cloves
- 1/8 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1/3 cup pure maple syrup
- 1/4 cup melted coconut oil (can sub olive or canola oil)
- 1/2 cup dried cranberries
Instructions
- Preheat oven to 320°F. Prepare a baking sheet with a silicone baking mat or parchment paper, set aside.
- Place all ingredients except the dried cranberries in a large bowl. Stir until the dry ingredients are well coated with the wet ingredients.
- Spread evenly onto prepared baking sheet. Place in oven and bake for 30 minutes, stirring half way through.
- Remove from oven and add the dried cranberries, stir until evenly mixed in. Allow the granola to cool completely.
- Store in an airtight container on the counter for up to 2 weeks or in the freezer for 2 months. Enjoy alone as a snack, as cereal with milk, or as part of a yogurt parfait!
