Fall is drawing near, which means time for fall produce! I love all the pumpkin and apple recipe this time of year. There are so many delicious ways to enjoy them, such as my apple walnut pancakes or my apple pumpkin muffins. Mmmm!
Today I’m sticking with the breakfast theme and sharing a recipe for Baked Apple Oatmeal Bars.
This recipe is kind of a mix between baked oatmeal and a bars recipe – hence the name Baked Apple Oatmeal Bars. You could definitely eat this as baked oatmeal, just serve your bar in a bowl and add a splash of milk. Or you can enjoy as a bar and take a big ‘ole bite, drinking your milk on the side.
Either way, these are a delicious and filling breakfast. You can even choose to enjoy it as an afternoon snack or evening treat. Really, any way you choose to eat these baked apple oatmeal bars, you can’t go wrong.

Description
These Baked Apple Oatmeal Bars are a delicious way to start your day. You can also enjoy them as an after school snack or evening treat!
Ingredients
- 1/4 cup coconut oil (or unsalted butter, melted)
- 1/4 cup packed brown sugar
- 1 egg
- 1 cup milk
- 1 ripe banana, smashed
- 3 cups rolled oats
- 1 cup whole-wheat flour (can use whole wheat pastry flour or white whole wheat flour)
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 small apples, peeled and chopped
Instructions
- Preheat oven to 350° F. Spray a 8X8 inch baking dish with non-stick cooking spray.
- Whisk together the oil (or butter), brown sugar, egg, milk and smashed banana; set aside.
- In a large bowl, combine the oats, salt, baking soda, cinnamon and nutmeg. Add the wet ingredients into the flour mixture. Stir to combine. Fold in the chopped apples.
- Pour into prepared baking dish. Bake for 30 minutes.
- Cut into 9 bars. Enjoy with a glass of milk!
Notes
You could also eat this as baked oatmeal, simply serve in a bowl and add a splash of milk.
