These healthy Chicken Salad Sandwich Sliders are the perfect appetizer or hors d’oeuvre for any party or gathering. Made healthier with Greek yogurt and whole wheat bread, these are sure to be a hit!
Earlier this month I received an invitation to a baby shower – but not just any baby shower, a virtual baby shower! Today I am participating in the virtual baby shower for fellow RD, Sarah Koszyk. Sarah blogs over at Family. Food. Fiesta. and is expecting her baby in October! This fun idea came from Liz Shaw of Shaw’s Simple Swaps. Liz invited a bunch of RD bloggers to the baby shower and asked us to share or create a blog post with some baby shower-friendly food, then share on social media using the hashtag #babykoszyk.
I don’t know if this is just a Utah thing or what, but it seems almost every baby (or bridal) shower I go to, chicken salad sandwiches are served. Fully loaded with mayonnaise and served on buttery croissants. I decided to do a recipe makeover on this oh-so-common baby shower food! And I went to one of my favorite ingredients ever – Greek yogurt.
Instead of the traditional mayo, I swapped in some plain Greek yogurt. When my husband got home from work he ate a sandwich and I asked him to guess the secret ingredient that made it healthier. He guessed Miracle Whip – Ha! When I told him it was Greek yogurt he was surprised and a little taken back because he said it tasted really good. He even asked me if he could take some of the leftovers to work with him for breakfast….whatever floats your boat, I guess!
To make the sliders I simply removed the crusts from slices of 100% whole wheat bread, inserted 4 toothpicks in the sandwich (see below) and sliced the sandwich into quarters. If you wanted to do whole sandwiches instead, feel free. Just keep the crusts on and don’t quarter the sandwiches. 🙂
You can also make the chicken salad in advance (up to 48 hours) and keep in the fridge until you are ready to make the sliders. Also, to make things easier on myself I used rotisserie chicken and shredded it, but if you want to cook up some chicken breast and cube it, that is fine too!
These chicken salad sandwich sliders are the perfect finger food – not just for baby showers – but for any gathering or party. Easy to make and they look so cute sitting there on the platter , all mini like. And I bet your guests will never know they are made with Greek yogurt, just like my husband didn’t! Tasty – check! Description
These healthy Chicken Salad Sandwich Sliders are made with Greek yogurt and are the perfect appetizer for any party or gathering!
Ingredients
- 2 cups shredded cooked chicken (I used rotisserie chicken)
- 1 cup chopped celery (about 3 stalks)
- 1 cup halved red seedless grapes
- 1/4 cup sliced almonds
- 1/2 cup plain Greek yogurt
- 1 teaspoon lemon juice
- 1/4 teaspoon ground black pepper
- 14 slices 100% whole wheat bread
Instructions
- In a medium bowl, combine the shredded chicken, chopped celery, halved grapes and sliced almonds.
- In a separate small bowl, whisk together the Greek yogurt, lemon juice and black pepper. Pour over the chicken mixture and stir until evenly coated.
- Remove just the crusts of each slice of bread. Lay out half of the slices of bread and place about 1/2 cup chicken salad on each slice. Top each with another slice of bread.
- Place a toothpick in the center of each quarter of the sandwiches, then carefully cut each sandwich into quarters. Place on a serving tray; cover and refrigerate until ready to serve.
- **You can make the chicken salad ahead of time and place in the fridge for up to 2 days, then place on the bread and create the sliders before serving.**
Notes
If you don’t want to make sliders, you can simply skip the step of slicing the sandwiches into quarters and keep them whole. Makes 7 whole sandwiches.
