Sometimes you just need some good old fashioned comfort food. Am I right? This soup here, my Grandma’s Cheesy Potato Soup, it does it for me.
My father’s parents were frugal people. They grew up during the depression. My grandma sewed all their clothes (she even made me underwear when I was a child!), she knew how to cook on a dime and they saved money where possible.
They also didn’t let any food go to waste. I remember one time at a restaurant my grandma had a packet of two saltine crackers to go with her soup. She only used one. By the end of our meal we were all full and there sat that lonely single saltine cracker. My grandma didn’t want it, but also didn’t want it to go to waste. She asked everyone on the table if they wanted the cracker. After many “no thank you’s”, finally my brother accepted the cracker and ate it to help her feel better about it. She was such a sweet woman.
Another frugal thing my grandma did was save containers. I’m talking cool whip, sour cream, cottage cheese, and gallon ice cream bucket containers. She would wash and reuse them to hold leftovers in, or even to store toys or random desk items in. You thought you were pulling the sour cream out of the fridge when, lo and behold, it really was some meatloaf from two nights ago. Can anyone else relate to this?
The gallon ice cream buckets were reserved for soup. The soup that frequented the ice cream buckets most often was my Grandma’s Cheesy Potato Soup. One bite of this soup brings a flood of memories back about my Grandma. I can still see her now, scooping the soup into the bucket so we could take some home and eat it later. She always made enough for us to take some home.
I think stories like this is what puts the comfort in comfort food. It brings back good memories and makes us feel good, not just in our tummies, but in our soul. I will be the first to admit this soup isn’t the healthiest soup out there (it’s not the worst, either), but I still think including some comfort food in our diets every now and again is just what we need.
I also feel a sense of pride in being able to share a part of my Grandma with all of you. Even though you never knew her, you can still enjoy this little part of who she was. And, you’ll fill your belly with some good food, too.

Description
Enjoy a bowl of Grandma’s Cheesy Potato Soup, a comfort food classic that warms the soul and satisfies your tummy.
Ingredients
- 1 1/2 lbs potatoes, peeled and diced 1 large onion, diced 1 quart (4 cups) water 1/4 cup unsalted butter 3 Tablespoons flour 1/2 cup milk 1 1/2 cups shredded cheese 1/2 tsp season salt 1/4 tsp paprika
- 1/4 tsp salt 1/8 tsp ground pepper chopped chives, for garnish
Instructions
- Combine potatoes, onion, and water in heavy sauce pan. Bring to boil. Reduce heat and simmer until tender, about 20 minutes.
- Meanwhile, in a heavy skillet melt the butter. Once melted, whisk in the flour. Cook and stir until the mixture bubbles. Reduce heat and stir in milk. Continue cooking and stirring until thickened.
- Add the butter/flour mixture slowly into the potatoes. Cook and stir until slightly thickened. Add in the cheese and seasonings.
- Serve topped with chopped chives. Season with additional salt and pepper, as desired.
