I think kids have an inherent hearing system specifically designed to work against parents. For example, they can hear an ice cream truck coming from a mile away, but if you are standing five feet from them they can’t hear you ask them to put something away. I get it, I was a kid once! I wish I still had that selective of hearing (though my husband might argue I still have it…).
But coming back to what really matters – the ice cream truck. I remember I could be sitting in my house and hear those chimes of the ice cream man start to ring in my ears. I would jump to my feet and rush out the door to the street to search for the direction from which the colorful truck was coming from. After I figured the locale of the truck I would run back in the house and frantically start searching for some money.
I really wanted that choco taco and time was of the essence! Once I rounded up enough change I would run back out as fast as I could. I forgot to mention, often I would be barefoot (you don’t have time to grab shoes, fools!) running across the rocks in our drive way (ouch!). I would get there just in time to stop the truck before he passed by my house.
Now when I think about, I really don’t like choco tacos. In fact, they’re not that good at all. It’s funny how that goes. My taste buds have definitely evolved since then. Both my waist line and health are glad for that!
Healthy “Ice Cream” Sandwiches Share on XSo moving on…For those of you with kids or grandkids, you know the challenge I face when trying to find healthy snacks and treats my tot will love. There are many (and mean MANY) unhealthy “snacks” out there aimed at children. Sometimes it is not worth the battle to find something else…but a lot of times you CAN find and make easy, healthy snacks for your kids.
This healthy “Ice Cream” Sandwiches will have your kids asking for more! I actually posted this to my Facebook page last week, but it has been so popular I decided to write a post with the recipe to make it even easier for you to save and reference for later. (Wink, wink: you should pin this recipe!)
Seriously though – with only 3 ingredients (that’s right 1, 2…3!) , this can’t get any easier! What’s even better, is your child can help you make this snack. When children are involved in the cooking process, they are more likely to eat the food. All you need for the recipe is graham crackers, a banana and almond butter of your choice (we LOVE Justin’s almond butter affiliate link). My little one loves to help mash the banana and mix in the almond butter. If you have older kids, they can help spread the mixture onto the crackers as well!
Another perk…these are only 100 calories each and packed with nutrients. Kid tested, dietitian approved. 🙂

Description
This Healthy “Ice Cream” Sandwiches have only 3 ingredients! It’s a super easy and healthy snack for kids. Dietitian and kid approved!
Ingredients
- 8 graham cracker sheets
- 1 banana
- 2 tablespoons almond butter of choice (I used Justin’s Maple Almond Butter)
Instructions
- Break the graham cracker sheets in half and lay out.
- Mash the banana in a bowl. Add the almond butter to the mashed banana and mix well.
- Spread the banana mixture evenly onto 8 of the graham cracker halves. Top with the remaining graham cracker halves.
- Place in a container or wrap in foil and put into freezer. When the middle is set up (about 6 hours) take out and enjoy!
Notes
Toddler Tip:
I broke some of my graham crackers into quarters for my little one (making 2 sandwiches from 1 graham cracker instead of 1). If you have a toddler who would do better with the smaller size, go ahead and mix and match the different sizes of sandwiches.
