It is now officially fall, which means ALL THINGS PUMPKIN! I can’t go through fall without sharing at least 1 pumpkin recipe. You can see what I’ve shared in the past by checking out my pumpkin soup, apple pumpkin muffins, or pumpkin pie overnight oats. This year, I’ll stick with my obsession of energy bites.
I mean, it doesn’t get any better than quick, easy, and delicious pumpkin chocolate chip energy bites! Packed with oats, flax seed, pepitas (shelled pumpkin seeds), pumpkin and of course, dark chocolate chips!
These pumpkin chocolate chip energy bites are gluten-free, can be made vegan if you use maple syrup and vegan chocolate chips, are a good source of fiber and the flax seeds contribute some healthy omega-3’s! What more could you want in an energy bite?!

Description
These Pumpkin Chocolate Chip Energy Bites are the perfect fall snack to get you through that afternoon slump or to refuel you post exercise!
Ingredients
- 1 1/2 cups rolled oats
- 1/2 cup ground flax seed
- 1/2 cup pepitas (shelled pumpkin seeds)
- 1/2 cup mini dark chocolate chips
- 1/2 cup 100% pumpkin puree
- 1/4 cup natural peanut butter
- 1/4 cup honey (or pure maple syrup)
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon ground cinnamon
Instructions
- Place all ingredients in a bowl and stir until well combined.
- Taking a heaping tablespoon at a time (I used a cookie scoop), form into balls.
- Place on cookie sheet or in storage container.
- For a firmer energy bite, place in the fridge for 1-2 hours before eating.
- To store, keep in a sealed container in the fridge for up to 1 week.
