I absolutely love the spring time. First off, the weather warms up! Don’t get me wrong, living in Utah I love the snow – but I definitely love me some warm weather. Second, all the cute baby farm animals! Baby chicks, baby calves, baby bunnies – anything baby is just cute. And last, but certainly not least is spring means the beginning of gardening season – which means spring produce!
One of my favorite vegetables just happens to be a spring vegetable: asparagus. I haven’t always loved asparagus, though. To be fair, it wasn’t because I didn’t like the taste of it – it was because I had never tasted it…until I went to college. I guess you could say my mother isn’t an asparagus fan so she never made it for us growing up. I’m glad I went to college so I could be exposed to this unfamiliar food.

Fast forward to nowadays and you will find asparagus a frequent item on my family’s menu, especially in the springtime. Asparagus not only tastes great, but it is a nutritional powerhouse. It is an excellent source of folate, and is also high in potassium, vitamin C, thiamin and vitamin B6.
According to the National Cancer Institute, asparagus is the highest tested food containing glutathione, an antioxidant and one of the body’s most powerful cancer fighters. Asparagus is also high in rutin, a compound known to strengthen the blood vessels.

This roasted lemon asparagus recipe is SO easy to make – even the beginningest (yes, I just made that a word) of beginners can make this! Start off by lining a baking sheet with a silicone baking mat or aluminum foil – this makes for easy clean-up.
Then grab your asparagus bunch and wash and trim those babies. After you have done that, place them on the silicone mat-lined sheet, drizzle your olive oil, squeeze the juice out of your lemon, and sprinkle the salt and pepper all onto the asparagus. Toss the asparagus so the ingredients are evenly spread on all of the spears. And that’s all the prep for this recipe!
Pop the asparagus in your preheated oven for 12 to 15 minutes. Remove and serve hot. Just like that, you have tasty, healthy oven-roasted lemon asparagus! You will love how simple this is to make and with the silicone baking mat, you might love how easy the clean-up is even more!

Ingredients
- 1 bunch asparagus
- 2 tablespoons olive oil
- juice of 1/2 lemon
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil.
- Wash/rinse the asparagus and trim the ends, if needed. Place on foil-lined baking sheet.
- Drizzle olive oil over asparagus. Rub to evenly coat all the spears. Squeeze the juice of a halved lemon over top of the asparagus. Sprinkle with salt and pepper. Lightly toss to combine all the ingredients.
- Bake at 400 degrees for about 12-15 minutes, or until tender-crisp.
