Who doesn’t love a good summer salad? I mean, full of produce, shared with friends and family and so many different ingredients and combinations to choose from! Who also doesn’t love using canned goods to make food prep easier? (insert raised hand here). Canned goods often get a bad rap for being too high in sodium – which in some cases they are, but that’s not always the case. They can make a great addition to your diet without wreaking havoc on your blood pressure.
Whenever I have the chance, I choose no-salt added varieties to keep the sodium content down. If there isn’t a no-salt added or reduced sodium variety available I drain the can and rinse the food at home, which won’t remove all of the sodium, but can reduce up to 40% of the sodium content.

I have been craving a good side salad that can double as an appetizer chip dip. I chose a Tomato, Corn and Avocado Salad. I used two different varieties of canned diced tomatoes in this recipe: Hunt’s® no salt added petite diced tomatoes and RO*TEL® Mexican style diced tomatoes with lime juice and cilantro.
My go-to for many of my shopping needs is Wal-Mart. They stock a wide variety of items, so I know I can always find what I am looking for. Hunt’s and RO-TEL diced tomatoes are easy to find; at my store they were on the aisle with the soups, spaghetti sauces and other canned goods.
This recipe puts a south of the border twist on classic American side dishes served at summer cookouts. It is ridiculously easy to make, tasty, serves a crowd and is crave-worthy. Hunt’s and RO*TEL canned diced tomatoes, canned corn, diced avocado and a few other ingredients combine effortlessly to make recipe prep a snap. Plus, there is so much flavor in every. single. bite. If you are ever in need of a last minute dish to take to a pot-luck or cookout, this is it.

This Tomato, Corn & Avocado Salad is a quick, easy and full of flavor side dish perfect for serving to friends and family!
Ingredients
- 1 14.5 oz. can Hunt’s no salt added diced tomatoes, drained
- 1 10 oz. can RO*TEL diced tomatoes with lime juice and cilantro
- 1 15 oz can corn, drained and rinsed
- 1 large avocado, diced
- 1/2 medium purple onion, diced
- 1/4 cup packed chopped cilantro
- 1 tablespoon extra virgin olive oil
- 1 teaspoon lime zest
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Combine all ingredients together in a medium-large bowl. Stir well until everything is distributed evenly.
- Serve as a side dish, or you can serve as an appetizer with chips.
- Store in an air tight in the fridge for up to 3-5 days.
