I’m always looking for a new and fun way to eat lunch. Lunch-time boredom does not discriminate even to dietitians. I get stuck in a rut and end up eating the same old thing over and over. Don’t get me wrong – if it’s healthy and delicious, why not eat it again and again. But sometimes you just need to shake things up a bit.

I chose to make Veggie Pita Sandwiches with Avocado Hummus using their Organic Sprouted Whole Wheat Pitas. Stuffed inside is alfalfa sprouts, sliced tomatoes and cucumber and homemade avocado hummus spread. Delish! These stuffed pitas are fresh, have the perfect crunch and are vegan. These really hit the spot, especially when you’re craving some veggie and whole grain goodness in your day.
The avocado hummus is super easy to whip together and can be used for more than just the spread in these sandwiches. I had to stop myself because I was eating it straight out of the bowl…I needed to save some for my pitas! So get creative with not only the pitas, but the spread, too!

Bring nutrition back to lunch with these fresh Veggie Pita Sandwiches with Avocado Hummus. Filled with crisp vegetables and homemade avocado hummus, these vegan stuffed pitas are the perfect lunchtime addition.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 large avocado, pitted
- 1 Tablespoon lemon juice
- 2 garlic cloves
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon salt
- 2 whole Toufayan Organic Sprouted Whole Wheat Pitas, cut in half
- 1/2 medium cucumber, sliced
- 1 large tomato, sliced
- 1 cup alfalfa sprouts, washed and patted dry
Instructions
- In a food processor or high power blender, combine the chickpeas, avocado, lemon juice, garlic cloves, pepper and salt. Turn on the food processor and blend until the avocado hummus is fully pureed and evenly mixed.
- One at a time, take a pita half and open it up to form a pita pocket. In each pita half spread 2 heaping tablespoons of the avocado hummus. Next, layer in the cucumber slices, tomato slices and alfalfa sprouts.
- Serve and enjoy!
Notes
Store any extra avocado hummus in an air-tight container for up to 5-7 days. Use as a spread or dip on anything you wish! Get creative!
